Hello! Uncle Paulie is bringing the taste of country home cooking in the form of an open-faced sandwich to the Northern Virginia area. Everything we prepare is fresh and sourced from local farmers and vendors. We slow roast all of our meats, beef, pork, turkey, and lamb.  We also purchase all of our cheeses, breads, and vegetables from local bakers and farmer's markets. We do this for three reasons. One, freshness is the key to great food. Two, knowing who grew what you are eating takes the guesswork of out of how it was grown. Three, by sourcing the majority of our products within 200 miles of us, we help reduce the carbon footprint that shipping adds to our food.

It is with a very heavy heart that I have to announce that we will no longer be going out on a weekly bases. We will do some weekend events and are available for catering. I wish to give my heartfelt thanks and gratitude to our regular customers. You all made it fun for Heather and I and we will both miss seeing you all.
